Since the winter of 2015 as part of our ongoing wood policy, we have been filling a small quantity of 500L ‘Traditional’ Oloroso and Pedro Ximinez Sherry Butts. These Sherry Butts have had multiple fills of Sherry over a period of up to 20 years, heavily seasoning the wooden staves. More recently we have evolved the Sherry wood policy to include ‘seasoned’ Sherry Butts. These casks are usually of American or European white oak which have been seasoned with Sherry for a shorter period of 2 years.
Each Butt imparts different flavour profiles onto the maturing whisky. Although both Sherry styles create wonderful hints of spices as well as dried fruit notes of dates and raisins, the Pedro Ximinez Butts character imparts extra hints of dark chocolate and demerara sugar. In contrast, the Oloroso Butts imparts extra hints of treacle toffee, honey, butter, and apple. Absolutely wonderful!
Due to some interruptions to our production schedule, because of the various national lockdowns, only a fraction of our usual annual spirit production was completed. This has resulted in an even more limited fraction being filled into our 2020 Oloroso and Pedro Ximinez Sherry Butts. Good news is that there is still a handful of these Butts available and filled with either peated or unpeated new make spirit.
