Kilchoman Whisky - Single Cask Bottle

This very special cask of Kilchoman Single Malt Scotch whisky was filled by David Thomson and Teresa Church on November 22nd 2006, whilst David was on a training course at Kilchoman Distillery, Islay. David was involved in the production of the spirit filled into Cask No. 2006/329. This was his very first experience of whisky production.

Kilchoman Single Malt Scotch whisky is quite heavily peated (~55ppm phenolics) which yields a flavour profile that is slightly more peaty/smoky than Annandale’s Man o’Sword but beautifully balanced.

As with Annandale, the character of Kilchoman’s whisky is greatly influenced by the late, legendary Dr Jim Swan who always sought to balance peat with fruit.

Matured in a refill ex-Bourbon cask for 10 years and 3 months, Cask No. 2006/329 is of great credit to both Jim Swan and to the production team at Kilchoman Distillery.
