NEW FOR DEC' 21. FOUNDERS' SELECTION REFILL BOURBON CASK BOTTLINGS
Since commencing production in November 2014, we at Annandale Distillery have adopted a ‘wood policy’ that aims to deliver both diversity of flavour along with the opportunity to mature our Single Malts for relatively short or relatively long periods of time, and everything in between.
One route to flavour diversity is through aging our whisky in high quality oak casks that have previously held various different wines, fortified wines or other spirits. Flavour derives, in part, from the naturally occurring flavour components in the oak, along with residual amounts of the previous occupant, both of which are extracted from the inside surface of the cask by the maturing spirit.
The other route to flavour diversity is through aging our spirit in different types of ex-bourbon barrels: ‘Fresh’ ex-bourbon barrels will have previously held bourbon, and nothing else, for a relatively short period of time (e.g. 3 or 4 years). This means that the oak still has lots of natural flavour components such as lactones (hints of coconut), vanillin (vanilla), tannins (astringency) and a natural sweetness, all of which can be readily extracted by the maturing spirit. The oak also holds residual amounts of bourbon which again, is readily extracted. ‘Fresh’ ex-bourbon barrels are said to be ‘active’ or ‘potent’ because they’re bursting with flavour compounds that transfer readily into the spirit. This means that the whisky inside will often mature quite quickly (usually 4 – 7 years) and it will typically have a sweet, confectionery, bourbon character overlaid on top of the intrinsic whisky flavour characteristics that typify the distillery in question (fresh orchard fruits in Annandale’s case).
‘Refill’ ex-bourbon barrels will have held bourbon in the first place (as above), followed by another whisky (hence ‘refill’). Normally this second occupant will have been Scotch Whisky, but Annandale Distillery prefers to mature its spirit in ‘refills’ that are second-filled with an American whiskey called Early Times. This was done on the advice of the late Dr Jim Swan and it has proved to be an inspired decision. With ‘refills’ the oak is much less active which means that it takes longer to mature the whisky within. However, because the oak character is much less dominant it allows the true character of the distillery to shine through.
Recently, during routine sensory evaluation of our stock of maturing whiskies conducted by Professor David Thomson (Distillery Co-Founder), James Rogerson (Cask & Whisky Specialist) and Keith Law (Whisky Consultant), we identified two ‘refill’ casks that had aged to perfection relatively early. One (Cask 2016/523) was filled with Annandale’s Man O’Sword (peaty/smoky), the other (Cask 2016/613) with our rich, sweet and fruity Man O’Words. We agreed unanimously that these whiskies would be ideal for our Founders’ Selection range. We’re confident that you’ll enjoy the the subtle character of Annandale!

Following on from the successful release of our first Founders Selection in November 2019, our pursuit to discover our next Founders Selection drew us to casks that have always sparked our curiosity.
March 2017 saw Annandale fill just 90x 230L Ex- STR (Shaved, Toasted and Re-charred) French Burgundy casks. We took great pleasure and interest in tracking the maturation journey of these casks and by March of 2020, the time came to select just 2 outstanding casks from the 90 casks filled to bottle. These were casks 321 (2017) Man O’ Words and 355 (2017) Man O’ Sword.
Cask 321 (2017) Man O’ Words (62.1% ABV)- this STR (Shaved, Toasted and Recharred) Ex-French Burgundy cask was filled with unpeated new make spirit on the 16th March 2017 and bottled on the 15th June 2020. This wonderfully unique Coopering process which was the Brainchild of the late Dr Jim Swan and Spanish cooperage Jose Miguel Martin produces a golden amber dram with spicy notes of cinnamon, vanilla, fresh conference pears, summer strawberries and Braeburn apple.

Founders’ Selection: Cask 2016/544 (Man O’ Sword) & Cask 2016/588 (Man O’ Words) SOLD OUT
It was during one of these routine samplings that we came across a clutch of sherry-conditioned virgin oak hogsheads, lurking in the dark and damp recesses of our historic bonded warehouses. We’d sourced 12 of these hogsheads in early 2016 from Miguel Martin (José y Miguel Martín SA, Spain). Eight were coopered in Spain from American oak. The other four, also coopered in Spain, were of homegrown Spanish oak. Half were filled with our unpeated Man O’ Words spirit and the other half filled with our peated Man O’ Sword.
Spanish oak (Quercus rubor) is faster growing than American oak (Quercus alba), giving it a more open grain. This allows the maturing spirit to penetrate the oak more readily to extract various flavour compounds. We thought this might be interesting……and it has certainly proved to be so!
Casks 2016/544 and 2016/588 are the inaugural bottlings in our Founders’ Selection range.
Cask 2016/544, 61.1%abv is a Spanish oak hogshead filled with Annandale’s peated Man O’Sword spirit. The profusion of flavour compounds extracted from the more open grain of the Spanish oak adds richness and depth to our highly acclaimed peated spirit, delivering a complex yet beautifully balanced Single Malt. (According to our Co-Founder, David Thomson, this is one of the best whiskies he has ever tasted and it’s currently his Single Malt of choice.)
SOLD OUT - Man O’ Sword – Cask 2016/544Cask 2016/588, 61.4%abv is an American oak hogshead filled with unpeated Man O’Words spirit. As the extraction of flavour from American oak is slower than from Spanish oak, the effect on our unpeated spirit is more subtle, adding richness, depth and complexity to Annandale’s characteristic fruitiness. The overall effect is of sensory maturity, well-beyond its years.
